Ingredients


  • 1000g Bicycle Bread Flour (Protein >12%)
  • 11g Dry men
  • 120g Granulated sugar
  • 10g Salt
  • 50g Milk powder
  • 150g Chicken eggs
  • 100g Butter
  • 550g Water
  • White sesame seeds, black sesame seeds, pumpkin seeds (optional)

How to make


Step 1
Add all ingredients to the mixer (except butter), beat on low speed for about 7 minutes, then on high speed for 5 minutes. Check that the dough has a smooth consistency 70% (thin film).

Step 2
Add the butter and continue beating on low speed for 5 minutes, then on high speed for 5 minutes. The dough should be shiny and form a thin film. Add the nuts and mix well.

Step 3
Divide the dough into small portions as desired, then shape them. Let the dough rise for about 60–90 minutes.

Baking
Bake at a temperature above 200 °C /
Baking time: 15 minutes (depending on the oven)
